  • 1 cup baldo rice
  • 1 cup + 2 fingers less than 1 cup hot water
  • 1 bouillon cube (optional)
  • 1 tablespoon butter (or margarine)
  • 1 tablespoon vegetable oil
  • Salt to taste


  • Start by placing the rice in a deep bowl, sprinkle salt over it, and pour hot water. Let it soak for 15-20 minutes. This process helps remove the starch from the rice.
  • As an additional tip, if you add 1-2 drops of lemon juice while sautéing the rice, you'll achieve a whiter and shinier rice pilaf.
  • Rinse the soaked rice thoroughly under plenty of cold water until the starch is completely washed away. Drain using a sieve.
  • In a pilaf pot, melt the mixture of butter and vegetable oil.
  • Add the rice and sauté thoroughly. Extend the sautéing process a bit; the longer you sauté, the more separate and distinct the rice grains will become.
  • Pour 1 cup + 2 fingers less than 1 cup hot water onto the sautéed rice, add the bouillon cube, and stir a bit. If you prefer, you can dissolve the bouillon cube in hot water before adding it.
  • Cook on the lowest heat setting until the water is absorbed.
  • Place a clean cloth over the pot, cover it with a lid, and wrap the pot in a tablecloth. Let it sit for a while to allow the rice to steam.
  • Your grain by grain pilaf is ready.

Note: If you make 1 cup + 1 cup less 2 fingers of water with chicken broth, it will be even more delicious. If your chicken broth is salty, omit the bouillon cube.
